Walls:
1 cup (250g) pumpkin puree
1/2 cup (125g) natural peanut butter*
1 tbsp unsulphured molasses
1/2 tsp ground cinnamon
3 cups (360g) chickpea flour
*peanuts and optional salt should be the only ingredient(s)
Mortar:
2 large egg whites, room temperature
1 tbsp natural peanut butter
1 c (120g) chickpea flour
Walls:
Line 2-3 half-sheet pans with parchment paper. In a large bowl or stand mixer, mix the pumpkin puree, peanut butter, and molasses until smooth. In a separate bowl, whisk together your dry ingredients (cinnamon and chickpea flour). Gradually add your dry mixture, stirring and then kneading until you achieve a dough with a clay-like consistency. If it is too sticky, add more chickpea flour. If too dry, slowly add a small amount of water. On a lightly chickpea-floured surface, knead until smooth with dry hands. Roll into 2 separate balls and wrap with plastic wrap. You can use the dough right away, or refrigerate for up to 24h in advance.
Preheat oven to 350°F (175°C). Using a bit of chickpea flour, dust your work surface and parchment paper. Unwrap a dough ball, cut it in half, and place it on the parchment paper. Roll it out into 1/8” thickness and place the parchment on a sheet pan. If you are using a 3DBYLDZ Dog Bone texture roller, roll it across your dough before cutting your pieces. Use a generous amount of chickpea flour.
Next, cut out your pieces. If you are building a Dog Den, cut out your 3DBYLDZ Dog Den construction set pieces, beginning with the largest first. Be sure to make two each of all pieces. Save your cutouts to bake for decorations. If any pieces break, gently push them back together before baking. Keep any scraps, mushing them into a ball, and knead them (wetting hands if necessary), before rolling out again. Repeat until you have cut out all pieces and removed all cutouts from window and door openings. With remaining dough, cut treats of any shape to decorate your Dog Den or serve to your eager taste-testers.
Place the parchment-lined baking sheets in the oven for approx. 20-25 minutes, or until just beginning to brown.
Once all of the pieces are baked, allow them to cool for 10-15 minutes, then transfer to a wire rack or parchment-lined countertop to cool completely. Once cool, pieces should have a crisp texture and should be sturdy enough for construction. Do not worry if you have any breaks. You can repair them with mortar and set them aside to dry.
Mortar:
Add 2 large egg whites (at room temperature) to a large bowl or the bowl of a stand mixer fitted with the whisk attachment, and whip on high approx. 1-2 minutes, until foamy. Add peanut butter and whip until well incorporated.
Reserve 1/4 cup of chickpea flour and set aside. Slowly add 2 3 /4 cups of chickpea flour to your egg whites mixture. Beat slowly until combined, scraping down the bowl with a spatula if needed. The dough will be extremely dry and sticky. Knead with your hands to finish.
Roll the clay-like mortar into a ball and set aside.
